Mighty Banana Muffins 

Here is the delicious recipe we use for a healthy snack!

Vegan Banana Muffins

1/2 cup oil
1/2 cup maple syrup
1 cup wheat flour
1 1/2 cup white flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1 tsp cardamom
4 or 5 RIPE bananas

Mix with a mixer and bake at 325 for 20 minutes for regular size muffins or 10 minutes for mini muffins. Thanks to Amanda and Kate G. for this easy recipe. We added cream cheese icing to the muffins for a birthday cupcake! Here is our boy at his first birthday with his first cupcake!

How I Spent Christmas Eve

Armed with a 20 gauge shotgun, some shells, and a few beers, we trekked out to Ron's house on Christmas Eve for the first annual mistletoe shoot. Not my usual order of business, but it sounded like too much fun to pass up. It's been many years since I've shot a gun and it's way louder than I remember. But then again, I'm pretty sure I had official ear protectors on. Paper towels were all we had on hand, so I stuffed them in my ears, and away we went. It was so fun and I'm proud to report that I shot out a huge branch (bundle?) of mistletoe. Good times, for sure. Thanks to Maria Camillo for the photos of me.
